- 12 oz. broccoli florets fresh
- 1 orange bell pepper (thinly sliced)
- 1 green onion chopped
- 1/2 red onion (thinly sliced)
- 1 cup sugar snap peas
- 1 tbsp Vegetable Oil
- 1 tbsp sesame seeds
- juice of half a lime
For The Sauce:
- 5 garlic cloves (minced)
- 1/2 cup vegetable broth
- 1/4 cup soy sauce (low sodium)
- 2 tsp sesame oil
- 2 tsp corn starch
- 2 tsp maple syrup
Start by whisking the sesame oil, garlic, soy sauce, maple syrup, vegetable broth, and corn starch in a medium bowl. Mix well and set aside.
Next, add the olive oil to the pan and turn the stove on medium-high. Then add the bell pepper, red onion, and broccoli florets. Season with salt and pepper according to your taste. Sauté the mixture for about 6 to 8 minutes.
After sauteing the mixture, reduce the heat to medium and add the sugar snap peas, and sauce. Now stir the mixture constantly and cook for another 3 minutes.
Once the sauce thickens slightly and all the veggies are coated in the sauce it should be finished.
After that, remove the mixture from the heat. Then stir in the juice of half a lime, green onion, and sesame seeds.
Finally, if desired, serve over rice or roti.
