30 Minute White Bean Kale Soup

This creamy vegan white bean and kale soup comes together in less than 30 minutes using only pantry ingredients and fresh veggies. It’s the perfect easy and quick dinner when you’re looking for something satisfying and hearty! White bean and kale soup is a flavor-packed, 30-minute veggie bean soup! It’s an easy dinner recipe for any cooking skill level and made for Instant Pot or stove. Kale soup with beans and veggies makes eating healthy on a budget anything but boring!

How To Make The Tastiest 30 Minute White Bean Kale Soup:


  • 4 cloves garlic (minced)
  • 3 cups vegetable broth
  • 3 cups chopped kale
  • 3 (15 oz.) cans white beans (drained and rinsed)
  • 1 (15 oz.) can full fat coconut milk
  • 1 cup sliced celery
  • 1 cup sliced carrot
  • 1 tbsp vinegar (apple cider, white wine, red wine, balsamic)
  • 1 tbsp extra virgin olive oil
  • 1 yellow onion (diced)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • Kosher salt
  • fresh cracked pepper

For The Garnish:

  • Croutons
  • fresh chopped parsley 


Start by heating the oil in a large pot set over medium-high heat.

Next, add the onion, celery, and carrots to the pot. Cook for approximately 8 minutes while stirring frequently.

Now, add the garlic, oregano, thyme, sage, and a large pinch of salt and pepper. Cook the mixture for an additional minute, while still stirring frequently.

After that, add veggie broth, white beans, and coconut milk to the pot. Again, stir the mixture to combine all the ingredients.  

Then, remove about two cups of the soup mixture and blend in a blender on high (This step is optional).

Next, return the soup mixture you just blended back to the pot and bring everything to a simmer over medium-high heat. 

Now, lower the heat to medium and simmer the mixture for about 5 minutes.

Once 5 minutes have passed, stir in the kale and vinegar.

Finally, season to your personal taste using salt and pepper.

If desired, garnish with some croutons and fresh parsley.
