Apple Cheesecake Bars

These apple cheesecake bars have a delicious crust and the tastiest cheesecake filing. Topped with a caramel drizzle, this recipe is simply irresistible and is guaranteed to make your mouth water.

These apple cheesecake bars are the perfect dessert for fall. Warm spices, creamy cheesecake, a shortbread crust, what more could you ask for!

How to prepare the best apple cheesecake bars:


For the crust:

  • 2 cups all-purpose flour
  • 1/2 cup light brown sugar
  • 12 tbsp cold butter (cut into small cubes)

For the cheesecake:

  • 2 (8 oz.) packages of cream cheese (softened)
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract

For the apples:

  • 3 granny smith apples (chopped and peeled)
  • 2 tbsp granulated sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

For the topping:

  • 3/4 cup light brown sugar
  • 3/4 cup all-purpose flour
  • 1/2 cup quick oats
  • 5 tbsp cold butter (cut into small cubes)
  • caramel syrup/sauce drizzle


Start by preheating the oven to 350 °F and line a baking sheet with parchment paper. Spray the parchment paper with cooking spray.

Now in order to make the crust, in a small bowl, combine all of the crust ingredients ( flour, sugar, and butter). Using your hands, mix the mixture until all the ingredients have been combined and the mixture is crumbly.

Then, place the crust in the prepared baking sheet lined with parchment paper. Bake the crust for approximately 15 minutes, or until you see a light brown color.

While the crust is in the oven baking, it’s time to make the cheesecake. So in a bowl of a stand mixer combine all of the cheesecake ingredients (cream cheese, vanilla, sugar, and eggs). Mix until mixture is creamy and smooth.

Next, it’s time to make the cinnamon sugar apples. In order to do that, in a small bowl, combine all of the ingredients for the apples (apples, sugar, cinnamon, and nutmeg). Mix until all the apples are evenly coated.

After that, pour the cheesecake mixture over the crust. Then evenly distribute the apples on top of the cheesecake mixture.

Finally, to make the streusel topping, start by combining the flour, oats, brown sugar, and butter in a medium-sized bowl. Then, using your hands, mix until all the ingredients have been combined. After that, add the streusel topping on top of the apples.

Cook the apple cheesecake bars for approximately 25-30 minutes, or until the middle is soft and the edges are pulled away from the baking sheet.

Once the apple cheesecake bars have finished cooking, take them out of the oven and transfer them onto a wire rack. Drizzle the caramel sauce over the apple cheesecake bars and let cool them cool for at least 1 hour before eating. Enjoy!
