Beef & Bean Chimichangas Recipe

These chimichangas are loaded with delicious ground beef, tomato, lettuce, baked beans, guacamole, and for a little bit of spice, jalapeno slices. If you are craving a Mexican dish, then these Chimichangas will fulfill your needs.

Seasoned with cumin, chili powder, and garlic salt, there is an explosion of flavors in this recipe that’s why it’s so tasty. This is one of my favorite family recipes. I guarantee if your family tries these chimichangas, they will also love them.

Instructions on making the best beef & bean chimichangas:


  • 6 large flour tortillas
  • 1.5 lbs 80/20 ground beef
  • 1 can of refried beans 
  • 1 can of corn
  • 1 small can of jalapeno slices
  • 1 small can of green chilis
  • 2 cups Mexican blend shredded cheese
  • 1 cup shredded lettuce
  • 1/4 cup chili powder
  • 1 cup taco sauce
  • 2 cups canola oil for frying
  • 2 tbsp guacamole
  • 2 tbsp sour cream
  • 2 tbsp garlic salt
  • 2 tbsp cumin
  • 1 large tomato
  • 1 medium white onion


In a large skillet, cook beef over medium heat until it’s no longer pink. Before it completely browns, drain the fat and add the corn, onion, and spices. Then add the hot sauce, stir everything together, and set aside.

After that, on a clean work surface, place down the tortilla. Put the refried beans in the middle and on top of the beans, put some of the beef mixture.

Next, put shredded cheese on top of the beef mixture and roll the chimichangas tightly, so they don’t fall apart.

Then on medium heat, add the canola oil for frying the chimichangas. Once the oil heats, place the chimichanga on the skillet, seas side down. Cook for approximately 1 minute on each side or until you see golden brown color.

When the chimichanga has finally finished cooking, place it on a plate lined with paper towels to let the chimichanga drain. Repeat with every chimichanga.

Once all you’ve finished all chimichangas, place them on another plate and serve with guacamole, sour cream, sliced jalapenos, tomatoes, lettuce, and a drizzle of hot sauce. Enjoy!
