- 6 flour tortillas
- 1 pound ground beef
- 1 teaspoon chili powder
- 1/4 teaspoon cayenne pepper powder
- 1 teaspoon chipotle chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon unsalted beef stock
- 1 tablespoon tomato paste
- 12 ounces shredded cheese blend (a combination of Monterey jack, cheddar, and mozzarella)
- 1/2 tablespoon olive oil
