Ingredients:

For the burrito bowl:

  • 2 boneless, skinless chicken breasts
  • 2 cups mixed greens
  • 1 cup cooked brown rice
  • 1/2 cup canned corn (drained) 
  • 1/2 cup black beans
  • 1/3 cup cherry tomatoes (cut into quarters)
  • 2 tbsp greek yogurt
  • 1 tbsp lime juice
  • 1 small avocado (sliced)
  • 1 jalapeno pepper (sliced)
  • 1/2 red onion (diced)
  • cilantro (chopped)
  • salt
  • pepper

For the chicken marinade:

  • 2 tbsp olive oil
  • 1 tbsp lime juice (freshly squeezed)
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp dried oregano
  • 1/4 tsp chili powder
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • salt
  • pepper

Instructions:

Start by combining all of the chicken marinade ingredients in a ziplock bag (olive oil, lime juice, cumin, paprika, oregano, chili powder, onion powder, garlic powder, salt, and pepper to taste). Then add the chicken breasts, seal the bag and shake the ziplock bag until the chicken combines with the marinade.

Next, heat a grill or a grill pan over medium-high heat. Add the chicken on top of the grill and cook the chicken for approximately 6 minutes on each side.

After the chicken is done cooking and is no longer pink, remove it from the grill and let it rest for at least 5 minutes. After it’s done resting, slice the chicken into strips.

Now, in a small bowl add the rice, cilantro, lime juice, salt, and pepper. Mix the ingredients by tossing them around in the bowl, do that until all the ingredients have combined.

Finally, in order to assemble the burrito bowls, start by adding the greens at the bottom of each one, then 1 sliced chicken breast. Next, divide the rest of the ingredients amongst the 2 bowls. Garnish with fresh cilantro and jalapeno and enjoy!
