This chicken parmesan casserole is filled with crispy chunks of chicken and rich tomato sauce. Not only that, it’s topped with stretchy mozzarella and parmesan cheese. It’s a very easy and tasty dish for the whole family.

How to make the best chicken parmesan casserole:
- 3/4 cup flour
- 2 boneless skinless chicken breasts
- 3/4 pound rigatoni pasta
- 3/4 cup vegetable oil
- 2 tbsp butter
- 32 oz. marinara sauce
- 1/3 cup Parmesan cheese
- 2 tsp seasoned salt
- 1/4 tsp pepper
- 3 cups mozzarella cheese
- 2 eggs
- 1 1/2 cups Italian breadcrumbs
Start by boiling the pasta according to the package directions. Then drain the pasta and add the parmesan cheese, 1 cup of mozzarella cheese, and the marinara sauce.
After that cut the chicken into 1/2 inch thick strips. Then take 3 bowls, in the first bowl whisk 2 eggs, in the second put 1.5 cups of breadcrumbs, and in the third add 3/4 cup flour, 2 tsp seasoned salt, and 1/4 tsp pepper.
Coat the chicken in the flour, then the eggs, and lastly the bread crumbs until completely covered. Then turn the oven to medium-high, and carefully lower the chicken into the oil.
Cook for about 4 minutes per side, or until golden brown. Feel free to add more oil if needed. After they are done cooking, put the chicken on paper towels to let them drain.
Preheat the oven to 375 °F. Then grease a 9 x 13 baking dish. Start by adding half of the sauce mixture. After that top with half of the chicken strips, 1/3 of the parmesan cheese, and 1 cup of mozzarella cheese. Then add the rest of the rigatoni, chicken strips, and the remaining parmesan and mozzarella cheese.
Bake the chicken parmesan casserole for about 25 minutes. If you want the top to be crispier increase the temperature and bake for an additional 5 minutes. When it’s done take it out of the oven, and let it cool for about 5 minutes before slicing.
