Cilantro Lime Chicken with Avocado Salsa

How To Make Cilantro Lime Chicken with Avocado Salsa:


For The Chicken:

  • 1.5 lb. boneless chicken breast
  • 1/4 cup fresh cilantro
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/4 tsp salt

For The Avocado Salsa:

  • 4 avocados (diced)
  • 1 garlic clove (minced)
  • 1/2 cup fresh cilantro (diced)
  • 3 tbsp lime juice
  • 1/2 tbsp red wine vinegar
  • 1/2 tsp red pepper flakes
  • salt, to taste


In a small bowl, add 1/4 cup lime juice, olive oil, 1 tsp of freshly chopped cilantro, ground cumin, as well as 1/4 tsp salt. Whisk until all the ingredients have been combined.

After that, incorporate marinade and chicken into an large zip-lock bag. Allow chicken to marinate for approximately 15 minutes.

Next, heat the grill to medium-high heat (which is about 400 °F). Place the chicken on the grill and cook for about 4-6 minutes on each side until the chicken no longer has pink. Once the chicken has finished grilling, take it off the grill and allow it to rest.

Then, toss gently to combine all the ingredients.
