One of my favorite low-carb snacks is this recipe. These crispy broccoli cheese rounds are not only healthy but are also delicious. Made with cheese and broccoli, this pairing doesn’t sound very tasty, but I can guarantee you that this recipe is worth making.
Not only are these broccoli cheese rounds keto-friendly, crispy, healthy, and delicious, but they are also so simple to make, requiring just a few ingredients. After your kids try this recipe, I bet they’ll stop hating broccoli as much.
Instructions on making the crispiest broccoli cheese rounds:
- 1 bag frozen broccoli rice (2 cups)
- 2 cups freshly shredded cheddar cheese
- 2 tbsp almond flour
- 1 large egg
Start by cooking the frozen broccoli rice according to the package instructions. (Typically in the microwave).
Now, strain as much excess water as you possibly can. Squeeze if needed. Then set the broccoli rice aside.
Next, preheat the oven to 400 °F. Line a baking sheet with parchment paper.
After that, in a medium-sized bowl, combine the broccoli rice, egg, almond flour, cheddar cheese, salt, and pepper to taste.
Then, take a small amount of the mixture from the bowl and shape it into a ball. You should end up with approximately 16 balls.
Press down the balls using your hand in order to flatten the balls a bit.
Now, line the baking sheet with the broccoli cheese rounds. Make some space in between every broccoli cheese rounds in order to avoid collision during the baking process.
Place the baking sheet on the middle rack and cook the broccoli cheese rounds for approximately 15 minutes. Once 15 minutes have passed, flip the to the other side and cook for an additional 10 minutes.
Finally, once the broccoli cheese rounds have browned on both sides and have finished cooking, take them out of the oven.
Serve with your favorite sauce and enjoy!
