Instructions on making the moistest chocolate muffins:
For the cupcakes:
- 1 cup all-purpose flour
- 1/2 cup hot water
- 1/2 cup vegetable oil
- 6 tbsp unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 cup buttermilk
- 3/4 tsp vanilla
- 1 cup of sugar
- 1/2 tsp salt
- 1 egg
For the frosting:
- 5 cups powdered sugar
- 5 tbsp heavy whipping cream
- 1 1/4 cups unsalted butter
- 3 tbsp Hershey’s dark cocoa powder
- 12 oz semi-sweet chocolate chips (melted)
- a pinch of salt
Start by preheating the oven to 300 °F. Line a cupcake pan with parchment paper.
In a large bowl, whisk together the dry ingredients. After that, in a medium-sized bowl, mix the buttermilk, egg, vanilla, and vegetable oil. Then add the wet ingredients with the dry ingredients and mix well. After combining all the ingredients, add the hot water to the mixture, and combine well.
Then fill the cupcake pan, lined with parchment paper with the cupcake batter. Bake for approximately 20 minutes or until a toothpick inserted into the middle of the cupcake comes out clean.
