These Easy Mozzarella Stuffed Meatballs are the perfect appetizer or dinner. They simmer in an easy tomato sauce and are packed with flavor! The juiciest and most tender meatballs ever!
The perfect two-bite appetizer to pass around during the holiday season, or anytime you have a special gathering! This recipe is also easy to make requiring only 40 minutes of your day.
How To Make Easy Mozzarella Stuffed Meatballs:
- 1 1/2 lb. ground beef
- 3 1-oz. individually-wrapped mozzarella cheese sticks
- 2 eggs (beaten)
- 1/3 cup Italian dried bread crumbs
- 1/4 cup parmesan cheese
- 1 tbsp Italian Seasoning
- 3/4 tsp salt
- 3/4 tsp black pepper
- 3/4 tsp garlic powder
- Pinch of red pepper flakes (optional)
Start by adding the ground beef, egg, Italian seasoning, salt pepper, garlic, as well as red pepper flakes into a medium-sized bowl.
Now, using your hands, combine the ingredients together until they are just mixed. Do not “squeeze” the mixture with your hands. Overworking the meat creates a “corky” texture.
Next, add the parmesan cheese and bread crumbs, and continue mixing with your hands until the ingredients are mixed together.
Then, pour the mixture onto the cutting board or clean counter, then form it into a rectangle. Make sure to smooth it down and work until it’s the perfect shape. Using a sharp knife, chop the dough into 24 pieces (squares).
Cover a baking sheet by using aluminum foil (for easy cleaning) and spray it with cooking spray. Place it aside.
After that, cut each cheese stick into 8 pieces (making a total of 24 pieces) and press one into the center of each of the meatball “squares”. Then roll each square into a tight ball.
Finally, place the meatballs onto the baking sheet and bake at 400 °F for 15-18 minutes. Don’t overcook or the mozzarella might bubble out of the meatballs.
Serve immediately on their own or over some spaghetti.
