How to make the best gluten-free oatmeal cookies:
- 1 1/4 cups Gluten-Free Oatmeal
- 1/2 cup butter
- 1/2 cup chocolate chips
- 1/2 cup sugar
- 2 eggs
- 4 tbsp Gluten-Free all-purpose Flour
- 1 tsp vanilla extract
- 1 tsp baking powder
Start by preheating the oven to 340 °F and line a cookie or baking sheet with parchment paper.
Then, in a small saucepan, add the butter. Cook until butter is melted and bubbly. But also be careful when you’re melting the butter in order to make sure it doesn’t burn.
Next, combine oatmeal with the melted butter. Stir the mixture until the ingredients have been combined. Once the ingredients have been combined, turn off the heat and set the mixture aside.
Now combine the oatmeal-butter mixture with the eggs, baking powder, flour, and vanilla extract. Using a spoon, mix the mixture until all the ingredients have been combined.
Finally, add the chocolate chips to the mixture and mix well. (If you don’t like chocolate chips, feel free to use raisins, walnuts, cranberries, blueberries, or any other topping you desire)
After that, take a tablespoon of your cookie dough and place it onto the cookie sheet lined with parchment paper. Leave a bit of space in between every cookie ensuring they don’t collide while cooking.
Now, place the cookie sheet in the oven. Bake for approximately 15 minutes, or until the cookies have a light brown color and are slightly firm to the touch.
