How to make the tastiest chicken breakfast burritos:

Ingredients:

  • 8 burrito tortillas (10 in.)
  • 8 eggs
  • 1 lb. chicken breasts
  • 1 cup broccoli florets
  • 1 cup cilantro (chopped)
  • 3/4 cup cheddar (shredded)
  • 4 cloves garlic (chopped)
  • 2 tbsp olive oil
  • 1 medium onion (chopped)
  • 1 red bell pepper (chopped)
  • 1 tsp chili powder
  • 1 tsp red pepper flakes
  • salt
  • pepper

Instructions:

Start by mixing the eggs in a medium-sized bowl. Then add 1 tbsp of oil to a skillet and heat over medium heat.  Once the eggs are cooked, remove them from the skillet and set them aside.

Next, add the other tbsp of olive oil to the skillet and heat the oil over medium-high heat. Then add the garlic and onions to the skillet. Stir the garlic and onions occasionally and cook until onions are translucent. After that, add the broccoli, bell peppers, chili powder, sausage, pepper flakes, salt, and pepper. Cook until vegetables soften, which should take around 5 minutes. Finally, add cilantro and set aside.

Now that we’re done preparing all of the ingredients, it’s time to assemble the burrito. In order to do that, start by placing down a tortilla, then add the eggs, chicken mixture, and some cheddar. Then fold the left and right sides of the tortilla over the filling. Fold the bottom flap of the burrito up and over the filling, tucking the sides and the filling as you roll the burrito.

If you plan on freezing the burritos, wrap them in foil. If not, serve immediately with your favorite dipping sauce and enjoy!
