Instructions on making the best homemade greek gyros:
For the meat:
- 1 cup Panko bread crumbs
- 1/2 cup milk
- 1 lb ground lamb
- 1 lb ground beef
- 6 cloves garlic (smashed and minced)
- 2 eggs
- 1 medium onion (chopped)
- 2 tbsp butter
- 2 tbsp lemon juice
- 4 tsp kosher salt
- 2 tsp dried cumin
- 2 tsp dried oregano
- 2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried marjoram
- 1/2 tsp dried rosemary
- 10 pitas
- 4 tomatoes (sliced)
- 2 cucumbers (sliced)
- 1 large red onion (sliced)
- 1 batch Tzatziki Sauce
Start by making the tzatziki sauce. Because it needs some time to make and needs to chill in the fridge.
Then preheat the oven to 350° F and line a baking sheet with parchment paper.
After that, in a large bowl, mix all the meat ingredients using your hands (bread crumbs, milk, lamb, beef, garlic, eggs, onion, butter, lemon juice, salt, cumin, oregano, black pepper, thyme, marjoram, and rosemary).
Then shape the gyro meat into 10 equal patties and line them onto the baking sheet lined with parchment paper.
Bake the patties into the preheated oven for approximately 20 minutes, or until the meat measures 165°F on an instant-read thermometer inserted into the center of the loaf.
While the patties are baking, warm the pitas in the oven, or microwave.
Once the patties have finished baking, top the warm pitas with tomatoes, cucumbers, red onion, gyro meat, and tzatziki sauce. Enjoy!
