This recipe is a classic Mexican dish containing seasoned ground beef rolled up in delicious corn tortillas. Commonly served with beans, rice, and sour cream this dish is simply irresistible.
These beef enchiladas are filled with a splendid homemade red enchilada sauce and topped with a nice layer of cheese. If you’ve been craving Mexican food that’s very delicious, then you’ve come to the right place.
Instructions on making the best beef enchiladas:
- 12 corn tortillas
- 1 pound lean ground beef
- 1 cup beef broth
- 16 oz. Colby-jack cheese shredded
- 1 tbsp vegetable oil, additional for frying tortillas
- 1/2 cup onion, finely diced
- 1 jalapeno minced and seeds removed
- 4 cloves garlic, minced
- 2 tbsp cilantro chopped
- 2 8 oz. cans tomato sauce
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp chili powder
- 1 tbsp sugar
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
In a large frying pan over medium heat, saute the jalapeno and onions for 2-3 minutes, or until onions start to soften. Add the garlic and cook for an additional minute. Then increase the heat to high and brown the ground beef. After that add the tomato sauce, beef broth, chili powder, cumin, sugar, salt, and pepper. Mix until all ingredients have been combined. Bring the heat down to low, and let the sauce simmer for about 10 minutes.
While the sauce is still simmering, in another smaller pan add vegetable oil and heat the corn tortillas. After each tortilla has been heated, put them on a plate, and in between each tortilla add a paper towel. When the sauce starts reducing, add the chopped cilantro.
Then preheat the oven to 400 °F and grease a 9×13 baking dish with non-stick cooking spray.
After that add half of the enchilada sauce mixture to the bottom of the baking dish. Then divide the beef mixture evenly between every tortilla, and split half of the cheese evenly between the tortillas. Roll the tortillas and put them seam side down in the baking dish.
Cover the baking dish with foil, and let it bake in the oven for approximately 25 minutes. Serve with your favorite side dish (sour cream recommended) and enjoy!
