How To Make Grilled Zucchini Hummus Wrap

What I like about this recipe is that you can make it ahead of time and just reheat it later. It’s perfect if you do meal prepping! Made with only 10 ingredients, this recipe is definitely a must-try!

Tutorial On Making Grilled Zucchini Hummus Wrap:


  • 1 zucchini (ends removed and sliced)
  • 2 large tortillas (I use Mission gluten-free)
  • 2 slices white cheddar or chipotle gouda cheese
  • 1 tomato, sliced (or handful of cherry tomatoes)
  • 1 cup kale (tough stems removed)
  • 1/8 cup sliced red onion
  • 4 tbsp hummus
  • 1 tbsp olive oil
  • salt
  • pepper


Start by heating a skillet or grill over medium heat.

Next, remove the ends from the zucchini and slice them lengthwise into strips. Then transfer the sliced zucchini in olive oil and season with salt and pepper according to your taste.

Now transfer the sliced zucchini directly to the grill and cook them for approximately 3 minutes on one side. Then, after about 3 minutes have passed turn the zucchini over to the other side and cook for an additional 2 minutes.

After that, place the tortillas on the grill for approximately a minute, or just until you can see grill marks.

Once the tortillas have finished cooking remove them from the grill and assemble the wraps. Start by spreading half of the hummus, zucchini slices, a slice of cheese, 1/2 cup kale, onion, and tomato slices.

Finally, wrap the tortillas tightly and enjoy them immediately or save them for later!
