Guide On Making The Tastiest Teriyaki Broccoli Chickpea Stir Fry:
For the stir fry:
- 16 oz. broccoli florets
- 2 cans cooked chickpeas (drained and rinsed, about 3 cups)
- 2 tsp sesame oil
- sesame seeds garnish (optional)
- salt to taste
For the teriyaki sauce:
- 1/4 cup coconut aminos (can sub soy sauce)
- 2 cloves garlic (minced)
- 2 tbsp balsamic vinegar
- 2 tbsp honey or maple syrup
- 1 tbsp cornstarch
- 1/2 tsp ground ginger
Start by whisking together the teriyaki sauce ingredients in a medium-sized bowl. Then set the bowl aside.
After that, place a large skillet over medium heat and add olive oil. Add the broccoli florets and cook them for approximately 6 minutes. Also, cover the skillet with a lid and stir the broccoli every once in a while.
If some of the broccoli is still frozen, using a wooden spoon, break it up.
Next, add the chickpeas to the large skillet and cook the mixture for another 5-6 minutes. Once the broccoli is tender add salt according to your taste.
Now, remove the large skillet from the heat and pour the teriyaki sauce over the stir fry. Make sure to stir the mixture so that the stir fry gets evenly coated by the teriyaki sauce.
Finally, serve the stir fry while it’s still warm over quinoa or some rice. If desired, add some sesame seeds on top.
