How To Make The Tastiest Grilled Mozzarella Sandwich

Made in just a few quick and easy steps, this recipe will be your new favorite sandwich. I mean WHO doesn’t love grilled cheese?! They are also the perfect hangover food!

Guide On Making The Tastiest Grilled Mozzarella Sandwich:

Ingredients:

  • 8 slices white country bread (about 1/4 inch thick each)
  • 4 oz. drained marinated artichoke hearts (thinly sliced)
  • 3/4 pound fresh mozzarella (thinly sliced)
  • 6 tbsp extra-virgin olive oil, divided (plus more as needed)
  • 5 small oil-packed anchovy fillets, minced (about 1/2 tablespoon)
  • 4 thin slices of mortadella (about 2 oz.)
  • 4 tsp homemade or store-bought pesto sauce

Instructions:

Start by heating 3 tbsp of oil over medium heat until it flows freely and is able to coat the bottom of your pan.

If your pan is small, it may be necessary, to cook in batches. Now, add the bread slices and cook, stirring and moving the bread around so that it toasts evenly, cook until it’s browned or for approximately 3 minutes.

Once 3 minutes have passed, flip the bread slices over and add the remaining oil. Cook until golden brown on both sides, which should take an additional 3 minutes. Add additional oil if needed. (If you are working in batches you will most likely have to add more oil.)

After all the bread has been toasted, transfer it onto a clean work surface and wipe down the pan.

Next, sprinkle minced anchovy on half of the toasts, and then add mozzarella, pesto artichokes, and top with the mortadella. Now, close the sandwiches.

Finally, transfer the sandwiches to a toaster oven then bake them at 350 °F until the cheese melts. If you don’t have a toaster oven, cook the sandwiches in a preheated 350 °F oven until cheese is melted, which should take about 5 minutes.

Serve immediately and enjoy!
