Low-Carb Keto Coconut Shrimp

This delicious and easy recipe for keto-friendly and low-carb coconut shrimp is the perfect way to make your shrimp! Although shrimp and coconut might sound like a bizarre combination, I can reassure you it tastes a lot better than it sounds.

With just a few simple ingredients and in less than 15 minutes you’ll have yourself a family-friendly and healthy recipe everyone will love, but no one says you have to share! You can also prepare this dish in two ways, one of them is to pan-fry it and the other is using an air fryer, the choice is up to you!

How To Make Low-Carb Keto Coconut Shrimp:

Ingredients:

  • 1 lb. (16 oz.) raw shrimp (peeled and deveined)
  • 3/4 cup organic unsweetened coconut flakes
  • 1/4 cup organic coconut flour
  • 2 eggs
  • 1 tbsp lakanto monk fruit sweetener
  • Salt
  • Coconut oil for pan-frying

Instructions:

Pan-Frying Method:

Start by mixing the salt, the Monk Fruit Sweetener, and coconut flour in a small bowl.

Next, create an assembly line made of three bowls. One with the flour mix, the second one with eggs, and finally, the third bowl is filled with unsweetened shreds of Coconut.

Now, coat the shrimp in the flour mixture, then in the egg mixture, and finally in the shredded coconut until well dredged.

After that, in a saute pan, fill about 2 inches of coconut oil and set it on medium-high heat.

When the oil is heated, place the shrimp in the oil, and cook for 1-2 minutes per side. Shrimp cook quickly, so do not let them cook for too long.

Air-Fryer Method:

Start by mixing the salt, Monk Fruit Sweetener, and coconut flour in a small bowl.

Next, create an assembly line made of three bowls. One with the flour mix, the second one with eggs, and finally, the third bowl is filled with unsweetened shreds of Coconut.

Then, set the air fryer at 380 °F.

Cook the shrimp for approximately 12 minutes or until golden brown.

Serve with your favorite sauce and enjoy immediately!
