One-Pot Chicken, Broccoli, And Rice Recipe

With this recipe, you won’t need to spend the rest of your day at the sink, because it only takes one dish to make. All you need for this recipe is one pan, a few cheap ingredients, and a total of ONLY 30 minutes.

How to make the tastiest one-pot chicken, broccoli, and rice recipe:

Ingredients:

  • 3 boneless, skinless chicken breasts (cut into small, bite-sized pieces)
  • 2 1/2 cups chicken broth
  • 2 cups shredded Colby Jack cheese
  • 1 cup uncooked basmati (or long-grain rice)
  • 1 bag (12 oz) frozen steamable broccoli 
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions:

Start by heating up the olive oil in a medium-sized skillet (around 12-inches) over medium-high heat.

Then add the bite-sized chicken pieces and sprinkle with some salt and pepper according to taste.

Cook the chicken for approximately 5 minutes, stirring occasionally. You’ll know the chicken has finished cooking when it’s no longer pink in the middle.

After 5 minutes have passed, add the chicken broth togheter with the rice. Then bring to a boil. Once it stats boiling cover the skillet with a lid and reduce the heat to medium-low.

Now let the mixture simmer from 12 to 15 minutes or until the rice is cooked and the water has been absorbed.

Meanwhile cook the broccoli in the microwave according to it’s package directions. Once the broccoli has finished cooking chop it up into smaller pieces.

Once the 12 minutes have passed and the rice has been cooked, add the broccoli together with 1 cup of the Colby Jack cheese to the skillet. Stir until all the ingredients have combined.

Next, top with the remaining 1 cup of Colby Jack cheese and cover the skillet with the lid.

Finally, let the mixture cook for an additional 2 minutes or until the cheese has completely melted.
