- 12 oz. pkg smoked sausage
- 1 1/4 cup white rice
- 1 1/4 cup low-sodium chicken broth (divided)
- 4 cloves garlic (minced)
- 1 small white onion (quartered and sliced)
- 1/2 red bell pepper (sliced)
- 1/2 yellow bell pepper (sliced)
- 5 tbsp tomato paste
- 1 1/2 tbsp parsley (chopped)
- 2 tsp olive oil
- 1 tsp paprika
- 1/2 tsp ground black pepper
- 1/2 tsp kosher sea salt
- 1/8 tsp cayenne pepper
Start by cooking the rice in a small saucepan according to it’s packages instructions.
Then, in a large cast-iron skillet placed over medium heat-heat, add the olive oil. Once the oil shimmers, add the sausage and cook until both sides are browned, which should take approximately 5 minutes.
After that, remove the pan from the heat and set it aside.
Next, sauté the peppers and onions for about 5 minutes. Now, add the garlic, salt, and pepper, and cook for an additional minute, or until fragrant. Then, remove the mixture from the heat and set it aside.
After that, add the 3/4 cup of chicken broth together with the tomato paste. Whisk the mixture to combine the ingredients and let it simmer for approximately 1 minute. Now, add the cayenne and paprika.
Finally, add the cooked rice, sausage, pepper, remaining chicken broth, and onions and stir until all the ingredients have been combined.
If desired, garnish with some fresh chopped parsley and serve immediately.
