  • 4 medium green peppers (halved)
  • 1.5 lb. ground beef (browned)
  • 1-1/2 cup cheddar cheese
  • 1 cup sour cream
  • 1/2 cup salsa
  • 3/4 cup water
  • 1 packet taco seasoning mix


Start by preheating the oven 350 °F.

Then, wash the bell peppers and cut them in half lengthwise. After cutting them in half, remove the seeds from the inside.

Next, place the bell peppers in the casserole dish and add 1/4 cups of water. Then cover them and microwave for 10 minutes, or until peppers are soft.

Meanwhile, brown the beef until it’s cooked through. Now, add the water and taco seasoning and cook according to packet instructions.

After the meat has finished cooking, add the salsa, sour cream, and 1 cup of cheddar cheese. Mix until all the ingredients have been combined.

Then, using non-stick cooking spray, spray a 13×9 baking dish. After that, place the bell peppers into the 13×9 baking dish and top with the remaining 1/2 cup of cheddar cheese.

Finally, bake the bell peppers at 350 °F for approximately 25 minutes. You’ll know they are finished cooking once the cheese has completely melted and the bell peppers are heated through.
