The Best Creamy Broccoli Mac & Cheese Recipe

Often, when I don’t feel like cooking, I’ll just make a quick dinner salad, a plate of scrambled eggs, and toast. But when I have a bit more time on my hands, I make this delicious broccoli mac and cheese. Made in just 30 minutes, this recipe is to die for.

If your kids don’t like the taste of veggies, especially broccoli, then this is the perfect recipe to sneak them in. Unlike other recipes, the broccoli tastes amazing in this one. I bet your kids will love it! Cheesy, healthy, and loaded with flavor, what’s there not to like!

How To Make The Creamiest Broccoli Mac And Cheese:


  • 8 oz. medium pasta shells
  • 6 oz. extra-sharp cheddar cheese (grated)
  • 3 cups chopped broccoli florets
  • 1 1/3 cups whole milk
  • 1 cup half and half
  • 2 cloves garlic (minced)
  • 1 shallot (minced)
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • 1 tsp Dijon mustard
  • Kosher salt
  • freshly ground black pepper


Start by boiling salted water in a large pot.

Then add the pasta and cook it according to the package directions.

Once the pasta has finished cooking, drain it from the water well.

Next, in a large skillet over medium heat, melt the butter. After that, add the garlic and shallots.

Cook until fragrant, which should take about 2 minutes. Also, make sure to stir the mixture occasionally.

Now, whisk in the flour and cook it until lightly browned, which should take about a minute. Then, add the milk, Dijon, and half and half.

Cook the mixture until it thickens, which should take another 3-4 minutes.

If your mixture is not the right consistency, feel free to add more milk if needed. Then season with salt and pepper according to taste.

Finally, stir in the pasta, cheese, and broccoli and cook until well combined, approximately 3-4 minutes.

Serve immediately and enjoy!
