The Best Cruffins Recipe

You might be wondering, what are Cruffins? Cruffins are a hybrid between flaky croissants and muffins. Basically, a dough that is used to make croissants is rolled up, placed into a muffin tray, and then baked.

With this recipe, you will end up with the lightest, flakiest pastry, which you can eat for breakfast, brunch, or as a snack. Paired with strawberry jam, this recipe is irresistible and guaranteed to make your mouth water.

How to make the best cruffins recipe:


  • 1 1/8 cups all-purpose flour
  • 1 1/4 cups bread flour
  • 1/2 cup water
  • 1/2 tsp salt
  • 2 tsp dry yeast
  • 2 tbsp sugar
  • 3/4 cup butter
  • 1/4 cup butter


Start by mixing both flours, the dry yeast, salt, and sugar in a large bowl until well combined. Then add the water to the mixture and knead the dough for 3-4 minutes at low speed. Feel free to add more water if needed.

After that, add the 1/4 cup of butter and knead the dough for 5 more minutes. After 5 minutes have passed, increase the speed to medium and knead for an additional 20 minutes. Then cover the dough with a clean cloth or plastic wrap and let it rest for at least 50 minutes.

Once the dough has rested, cut it into 4 equal pieces. Then push each piece out into a rectangular shape. Then, using a pasta machine set to the thickest increment, put the dough through the machine, keep rolling out the dough with the machine until you reach the thinnest increment. Then using a knife cut the dough strip in half and lay both flats on a clean work surface.

Next, spread 1/4 of the remaining butter on top of the two dough strips. Then using a rolling pin, thin out the dough strips and cut them into 2 equal pieces horizontally. To shape the cruffins, twirl the half dough roll into a knot and tuck the ends underneath. Then put it into the muffin tin. Repeat with the other half.

After that, cover the muffin tin with plastic wrap and let the dough rise until doubled in size. Could take anywhere between 40 to 90 minutes.

Preheat the oven to 390 °F and bake the cruffins for approximately 25 minutes or until golden brown. Then let them cool on a wire rack and serve with your favorite jam and enjoy!
