This is one of the simplest and tastiest recipes. Just cook the ground beef with onions, season with enchilada sauce, and taco seasoning, then simply add the Fritos, cover the Fritos with shredded cheese, and bake until hot and bubbly.
What I like about this recipe is how customizable it is, you can really customize it to your own taste and preference (for example I like to add jalapeños, refried beans, or any of your other favorite traditional taco ingredients). How to make the easiest Frito pie recipe:
- 1 lb. lean ground beef
- 1 bag (9.25 oz.) Fritos corn chips (divided)
- 1 can (15 oz.) pinto beans (drained and rinsed)
- 2 cups shredded Mexican blend cheese (divided)
- 1 can enchilada sauce
- 2/3 cup water
- 1 package taco seasoning mix
- 1 small onion (peeled and diced)
- 1 green onion (chopped)
- sour cream (for garnish)
- guacamole (for garnish)
Start by preheating the oven to 350 °F and spray a 9×13 baking dish using non-stick cooking spray.
Then, in a large skillet, crumble the ground beef. After that, add the onions and cook the beef over medium. Now, cook the beef until it’s browned while stirring the mixture constantly.
Once the beef has browned and finished cooking, drain off any excess fat. Then add the water together with the seasoning mix and bring the mixture to a simmer. Simmer for approximately 4 minutes while stirring often.
Next, add the beans and enchilada sauce and stir constantly.
After that, add 4 cups of Fritos onto the bottom of the prepared 9×13 baking dish. Then sprinkle about 1 cup of cheese on top of the Fritos.
Now, spread the ground beef mixture evenly on top of the cheese. Then top the meat with the remaining cheese.
Finally, bake the Frito pie in the preheated oven for approximately 20 minutes, or until cheese is hot, bubbly, and melted. Then sprinkle the remaining Fritos on top of the casserole.
Let the Frito pie cool for at least 10 minutes before slicing and serving, otherwise it will fall apart. Serve with sour cream, chopped green onions, and guacamole.
