The Easiest Grilled Caprese Chicken Recipe

This Caprese Chicken is out of control flavor-packed! Stuffed with tomatos and mozzarella, then topped with fresh basil and drizzeled with some aged balsamic vinegar. This EASY chicken recipe will soon be in your weeknight dinner rotation!

This healthy family dinner is ready in less than 30 minutes, so no need to spend your entire day in the kitchen making dinner for your whole family. What I like about this recipe is the balsamic marinade that gives the chicken a tangy punch making it an ever tastier dish! 

Guide On Making The Easiest Grilled Caprese Chicken Recipe:


  • 8 oz fresh mozzarella (sliced into 8 even pieces)
  • 4 5-7 oz chicken breasts (pounded to even thickness)
  • 2 vine ripened tomatoes (sliced into 1/2″ slices)
  • 2 tsp italian seasoning
  • 2 tsp sea or kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil
  • 1 tsp cracked black pepper
  • fresh basil (to taste)
  • aged balsamic or balsamic glaze (to taste)


Start by placing one chicken breast onto a sheet of parchment paper. Then fold the paper over the chicken.

Next, using a rolling pin, pound the chicken breast to even thickness of somewhere less then about 1″. Set aside and repeat with the remaining chicken breasts.

Now, into a small bowl combine all the seasonings – italian seasoning, garlic powder, onion powder, sea salt, and pepper. Stir all the ingredients so that they combine.

Then brush the chicken using the olive oil and sprinkle with the seasoning mixture. Now, flip the chicken over to the other side and again, brush it with oil and sprinkle with the seasoning mixture.

After that, heat a grill over high heat. Then place the seasoned chicken breasts onto the grill and cook it for approximately 5 to 6 minutes per side, or until the internal temperature reads 155 °F.

Once the internal temperature has reached 155 °F, top the chicken breasts with the mozzarella cheese. Grill the chicken breasts for another 3 minutes or until the cheese has melted.

Now, place the chicken breasts onto individual plates. Then top each chicken breast with 2-3 slices of fresh tomatoes, and sprinkle with some fresh basil. If desired season with some additional salt and pepper to taste.

Finally, just before serving, drizzle with aged balsamic vinegar or balsamic reduction. Serve immediately.
