My favorite chicken kebabs recipe requires just a few simple ingredients and is the most delicious summer dinner! You should definitely try this recipe at your next family gathering. A great way to impress your guests.
Tender, juicy chicken is marinated and grilled (or baked) with peppers, and onion. As a big plus, the entire dish can be made ahead of time. So simple yet so delicious. One of the best meals to prepare for a light summer dinner or a family gathering.
How To Make The Tastiest Marinated Chicken Kebabs:
For The Chicken Kebabs:
- 2 lb boneless (skinless chicken thighs removed of excess fat and cut into bite-sized pieces)
- 1 cup red onion, red and green bell pepper or any vegetables of choice
- fresh parsley, lemon, and/or yogurt sauce to serve
- garlic turmeric rice or any other sides such as naan or salad, to serve
For The Marinade:
- 1 cup plain yogurt 2% or full fat recommended
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- 1 tsp oregano
- 1 tbsp paprika
- 1/2 tsp cumin
- 1/2 tbsp kosher salt
- 1/2 tsp black pepper
Start by combining all the marinade ingredients in a large bowl or a large container. Then add the chicken, bell peppers, and red onion, toss until the chicken has been coated well.
Cover the container or bowl and refrigerate for at least 8 hours or overnight.
Next, preheat the oven to 450°F and line a baking sheet with aluminum foil.
Now, thread the marinated chicken and vegetables onto skewers. Bake the chicken kebabs for about 20-25 minutes or until golden brown and cooked through. Flip the kebabs halfway through the cooking process so they get nice and golden and both sides.
If you decide to grill the kebabs, start by preheating and greasing the grill. Then place the kebabs onto the grill and grill them until they are golden brown and cooked through. This usually takes about 10-15 minutes. Also, make sure to turn the kebabs occasionally so they don’t end up burning.
Finally, if you’d like your chicken kebabs to have a nice charred finish, switch the oven to the broil setting for about 2-3 minutes.
If desired, garnish with lemon wedges, parsley, and/or yogurt sauce and serve immediately.
