The Tastiest Hot Honey Chicken Bowls

Ingredients:

For The Hot Honey Chicken:

  • 2 medium boneless chicken breasts
  • 1/3 cup honey
  • 1/4 cup sriracha
  • 1 tbsp avocado oil
  • 2 tsp minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp crushed red pepper (optional)
  • 1/4 tsp cayenne (optional)

For The Bowls:

  • 2 cups cooked rice (or quinoa)
  • 1/2 cup healthy ranch dressing (optional)
  • 2 medium zucchini (sliced)
  • 1 medium summer squash (sliced)
  • 1 medium avocado (sliced)
  • 1 medium lime
  • 1 1/2 cups shredded carrots

Instructions:

Start by preheating the oven to 400 °F.

Next, in a skillet placed over a stovetop, cook the chicken in the oil for approximately 5 to 7 minutes per side.

Now, in a small bowl, mix the honey, sriracha, garlic, salt, pepper, cayenne, and crushed red pepper in order to create the sauce.

After you’ve made the sauce, reserve about 2 tablespoons of hot honey sauce.

Then, add the sliced zucchini and summer squash to the skillet and remove from heat.

Next, put the chicken over the squash – on top and pour the hot honey sauce over it, covering the chicken evenly. Drizzle some sauce over the squash too.

Once you’ve prepared the chicken, place the entire skillet into the oven to bake for approximately (or up to the time that the chicken has cooked). Also, make sure to stir the vegetables halfway through the cooking process.

Once the chicken has finished cooking, take the skillet out of the oven and allow it to cool for around 5 minutes.

Then, slice the chicken into cubes and cover them evenly with the remaining 2 tablespoons of honey hot sauce.

Finally, serve each bowl with cooked rice, zucchini, summer squash, shredded carrots, avocado slices, hot honey chicken, lime juice, and a drizzle of ranch!
