The Tastiest Italian Stuffed Peppers

These Italian Stuffed Peppers are stuffed with the tastiest brown rice and ground turkey, Italian seasoning, melty mozzarella parmesan cheese, and flavored with everything you love about Italian cooking! I can guarantee your kids will love these stuffed bell peppers because of the bright and colorful colors they have.

They can be prepped ahead of time for an easy dinner during the week, or you can even make a batch to have stored in the freezer for tasty healthy dinners for those long and busy days. This is one of my favorite ways to prepare bell peppers because of the flavorful stuffing oozing with cheese.

Instructions on making the tastiest Italian stuffed peppers:


  • 3 bell peppers
  • 1 lb. ground turkey or ground chicken
  • 1 onion (diced)
  • 1 cup mozzarella cheese grated (half goes in the stuffing, and the other half goes on top of the peppers)
  • 1 cup cooked brown rice
  • 1/4 cup parmesan cheese (grated)
  • 1 can diced tomatoes
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1 tbsp fresh basil or parsley (chopped)
  • 1/4 tsp ground black pepper
  • salt
  • pepper


Start by preheating the oven to 350 °F.

Then remove and discard the tops, seeds, and membrane of the bell peppers and set them aside.

Next, brush the bell peppers with a little bit of olive oil and roast them in the oven. Once they are just undercooked, take them out of the oven.

Now, sauté the onions in a non-stick pan until soft and translucent. After that, add ground turkey (or chicken), salt, pepper, and Italian seasoning.

Once the ground turkey browns, using a wooden spoon, break it apart and then add the can of diced tomatoes. Then cook everything together and stir the mixture occasionally.

After that, add the brown rice, half of the grated mozzarella, parmesan, and put the heat on medium. Cook the mixture until the cheese has melted and then season with salt and pepper according to taste.

Finally, spoon the mixture into the hollowed out bell peppers and top with the remaining half of the mozzarella cheese.

Then, put them back into the oven and cook the bell peppers for an additional 10 minutes. Once 10 minutes have passed and the cheese has melted, take them out of the oven.

Serve hot and enjoy!
