The Tastiest Loaded Baked Potato Soup

Baked potato soup is a thick and hearty soup that takes all the flavors of your favorite loaded baked potato and simmers them together to create this belly-warming, comforting soup. Perfect for when you are feeling cold and want to warm yourself up!

Loaded with bacon and chives, sour cream, cheddar cheese, and smooth potatoes, this recipe is to die for! It uses simple ingredients and is pretty easy to make, perfect for busy weeknights!

How To Make The Tastiest Loaded Baked Potato Soup:


  • 6 slices thick cut bacon
  • 4 large russet potatoes (2 lbs.)
  • 3 cloves garlic (minced)
  • 1 large yellow onion
  • 3 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 2 cups half and half
  • 3/4 cup sour cream
  • 1/4 cup flour
  • 1/8 cup chives (finely diced)
  • 2 tbsp butter
  • 3/4 tsp salt
  • 1/2 tsp pepper


Start by cutting the bacon into 1-inch squares. Then place it into a large pot over low heat and rotate them occasionally. Cook the bacon until it shrinks and is crispy.

Once the bacon has finished cooking, remove and set aside. Leave 2 tbsp of drippings in the large pot.

Now, peel the potatoes and cut them into 1-inch cubes. Add to a stockpot and cover the potatoes with 1 inch of water. Add the salt and boil the potatoes for approximately 10 minutes. Once they have finished boiling, drain the pot, mash the potatoes, and set the pot aside.

After that, add the diced onion to the pot with the 2 tbsp of bacon drippings and cook until softened for about 5 minutes.

Next, add the garlic and cook for an additional minute. Whisk in the flour and using a silicone spatula stir and cook the mixture for another minute.

Then add the chicken broth and using the same spatula scrape the bottom of the pan.

Now, carefully and slowly add the half and half. Bring the mixture to a boil, then reduce to a simmer.

Add in the potatoes, sour cream, and season with pepper. When the soup has finished cooking, purée until smooth with a stick blender or liquidizer.

Next, sprinkle some shredded cheese and stir until combined. Just make sure the soup isn’t too hot. If your soup hasn’t reached your desired consistency, let it sit as it will thicken the longer it rests.

Finally, if desired, season with some green onions and some additional bacon.
