How To Make The Tastiest Vegan Curry Ramen Noodles:
- 1 (13.5 oz.) coconut milk
- 8 oz. ramen noodles
- 8 oz. sliced mushrooms
- 6 cups vegetable broth
- 1 cup shredded carrots
- 1 cup sugar snap peas
- 6 cloves garlic (minced)
- 1-3 tbsp red curry paste
- 1 tbsp sesame oil
- 2 tsp curry powder
- 2 tsp minced ginger
- Juice of 1 lime
- Kosher salt
- Freshly ground black pepper
Start by heating up olive oil in a Dutch oven or large pot placed over medium heat.
Next, add the peas, carrots, and mushrooms. Season with salt and pepper according to your taste.
Cook the mixture for approximately 3 minutes while stirring occasionally.
After that, add the curry powder, curry paste, ginger, and garlic and cook for 1 minute, still stirring the mixture.
Now, stir in the the broth together with the coconut milk and season to your preferred taste with salt and pepper.
Then increase the heat to medium high and bring the mixture to a simmer.
Finally, add the ramen noodles and cook them according to the package directions, usually for about 10 minutes.
Add the lime juice to the noodles and stir the mixture.
If desired garnish with some jalapeno, fresh cilantro, and lime wedges.
