- 1 lb gnocchi
- 7 oz. vegan sour cream
- 7 oz. vegan cream cheese
- 6 oz. vegan chicken cubes
- 3 cloves garlic (diced)
- 2 ribs celery (chopped)
- 3 cups vegetable broth
- 1/3 cup onions (finely chopped)
- 1/4 cup carrots (shredded)
- 2 tbsp olive oil
- 1 tsp Italian herbs
- a handful of spinach
Start by heating the olive oil, then add diced celery, garlic, onions and sauté for approximately 2 minutes.
After 2 minutes have passed, add the vegan chicken, and season with salt and pepper according to your taste.
Then, fry the mixture for an additional 3 minutes or until the chicken begins to brown.
Now, add the vegetable broth to the saucepan and bring to boil.
Next, add the gnocchi to the pot and let it cook for about 2 to 3 minutes.
After cooking the gnocchi, add the cream cheese, sour cream, shredded carrots, Italian herbs, and spinach.
