How To Make The Tastiest BBQ Pineapple Chicken Kabobs:
- 2 lb. boneless, skinless chicken breasts (cut into 1-inch chunks)
- 2 cups fresh pineapple chunks
- 2/3 cup barbecue sauce
- 2/3 cup teriyaki sauce
- 3 cloves garlic (minced)
- 1 red bell pepper (cut into 1 1/2-inch pieces)
- 1 sweet onion (cut into 1 1/2-inch pieces)
- 2 tbsp canola oil
- 1 tbsp freshly grated ginger
- Kosher salt
- freshly ground black pepper (to taste)
Start by combining the barbecue sauce, teriyaki sauce, garlic, and ginger in a medium-sized bowl. Reserve a 1/2 cup of the sauce and set it aside.
Next, in a gallon size Ziploc bag combine the barbecue sauce mixture and chicken.
Then marinate the chicken for at least 2 hours to overnight, up to 8 hours. Also, make sure to turn the bag every once in a while.
Once the chicken has finished marinating, take it out of the fridge and drain it.
Now, thread chicken, pineapple, bell pepper, and onion onto skewers. Brush all the ingredients with canola oil. Also, season using salt and pepper according to your taste.
