The Ultimate Chicken Fried Steak With Gravy

How To Make The Ultimate Chicken Fried Steak With Gravy:


  • 4 cubed steaks (each about 1/3 pound)
  • 1 1/2 cups vegetable oil

For the buttermilk marinade:

  • 2 cups buttermilk
  • 2 large eggs
  • 3 tsp salt

For the breading:

  • 1 cups flour
  • 1/3 cup corn starch
  • 1 1/2 tsp seasoned salt
  • 1 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper

For the gravy:

  • 1 1/2 cup milk
  • 1/2 cup chicken broth
  • 3/4 cup half and half
  • 3 cloves garlic (minced)
  • 1 sprig of fresh thyme
  • 3 tbsp butter
  • 3 tbsp flour
  • 3 tbsp pan drippings
  • 1 tsp black pepper
  • 3/4 tsp seasoned salt
  • 1/4 tsp cayenne pepper


For the chicken fried steak:

Start by tenderizing the steak cubes. So, in order to do that, pound it with a meat tenderizer until it’s thinned out.

Then, pat the stake dry and combine the marinate ingredients (buttermilk, eggs, and salt) in a large casserole dish.

Next, dredge the steak completely with the marinade and cover them. Refrigerate them for al least 2 hours, but if you have more time I recommend you refrigerate them overnight.

Now, in a large bowl, combine the breading ingredients (flour, cornstarch, paprika, cayenne pepper, salt, and pepper).

After that, coat each piece of steak and immediately add it to the pan. Again, if you have enough time on your hands, fry the steak pieces one at a time, but if you are in a hurry, just make sure the stake pieces aren’t touching each other.

Then add oil just enough so that it covers 1/3 of the steak. Also, feel free to add more oil if needed, you will probably need it as time goes on.

Heat the oil at approximately 350 °F and fry the steak in it for approximately 4 minutes. Using kitchen tongs, carefully flip the steak on the other side.

Once the steak has a beautiful golden brown color, remove it from the heat and set it aside on a baking sheet.

When you’ve finished cooking the whole batch of steaks, keep them warm at approximately 200 °F while you prepare the gravy.

For the gravy:

Once you’ve finished with the chicken it’s time to prepare the grave. So, start by pouring the pan drippings into a heat-proof bowl.

Then, wait until the black flecks fall to the bottom and skim 3 tbsp of clean oil off the top. Set aside.

Next, in a pan placed over medium heat, melt the butter.

Once the butter has melted, whisk in the flour and cook it for another minute.

Now, add the oil drippings and garlic and cook for an additional minute.

After that, add chicken broth, seasonings and stir the mixture until all the ingredients have been combined.

Still stirring the mixture, add the milk and half and half together. Bring the mixture to a boil while still stirring constantly.

Finally, let the mixture simmer until your preferred consistency is obtained. If you’d like you could also additionally season the gravy with salt and pepper according to your taste.

Serve chicken fried steak with gravy and if desired serve with some mashed potatoes and fresh pickles as well.
