Tutorial On Making The Tastiest Baja Fish Tacos with Avocado Crema

Guide On Making The Tastiest Baja Fish Tacos with Avocado Crema:

Ingredients:

For The Baja Fish Tacos:

  • 16 corn tortillas
  • 2 lbs. cod filets
  • 2 tbsp avocado oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp ancho chili powder
  • cooking spray
  • fresh pico de gallo

For The Cabbage Slaw:

  • 2 cups green cabbage (thinly sliced)
  • 2 cups purple cabbage (thinly sliced)
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tsp honey
  • salt
  • pepper

For The Avocado Crema:

  • 2 avocados
  • 1 garlic clove
  • 1/4 cup fresh cilantro
  • 2 tbsp red wine vinegar
  • 1 1/2 tbsp lime juice
  • 1 tbsp olive oil
  • 1/4 tsp cumin
  • 1/8 tsp red pepper flakes
  • salt to taste

Instructions:

Start by making the cabbage slaw. In order to do that, in a large bowl, add purple cabbage, green cabbage, 2 tbsp of lime juice, honey, cilantro, salt, and pepper. Then, toss the bowl around so that all the ingredients have combined.

After making the cabbage slaw, it’s time to make the Avocado Crema. So, add avocado, garlic, 1/4 cup cilantro, red wine vinegar, cumin, red pepper flakes, 1.5 tbsp of lime juice, olive oil, and salt to a food processor. Blend the mixture until it’s smooth and has the consistency of a puree or dressing.

Once you’ve made the avocado crema, start by preparing the Baja fish tacos. Now, in a small bowl, 1 tsp smoked paprika, add 1 tsp garlic powder, 1/2 tsp cumin, 1/4 tsp ancho chili powder, 1/2 tsp salt, and 1/4 tsp ground black pepper. Stir the mixture well so all the ingredients combine.

Next, season both sides of the codfish, and gently rub the season fish using your fingers.

After that, heat a large non-skillet skillet to medium-high heat.

Then add avocado oil to the pan. Once the pan has heated up, immediately add the seasoned cod. Cook each side for approximately 2-3 minutes.

Once the cod has finished cooking, remove it from the pan and set on a plate to cool.

If you want your corn tortillas to be warm, heat a skillet over medium-high heat, spray both sides of tortilla with cooking spray, and cook for about 1-2 minutes on either side.

Finally, in order to assemble the Baja Fish Tacos, inside of the corn tortilla add 2 tablespoons of avocado crema, 1/3 cup slaw, 2 oz. of cod, and pico de gallo.
