- 8 oz bacon (1/2” diced pieces)
- 4 red potatoes chopped
- 4 eggs
- 2 garlic cloves (minced)
- 1/2 cup extra-sharp cheddar cheese
- 3 tbsp butter
- 2 tsp vegetable oil
- 1 1/2 tsp seasoned salt (divided)
- 1/2 tsp salt
- 1/2 tsp ground black pepper (divided)
Start by preheating your grill or oven to 400 °F.
Next, in a medium-sized bowl, combine the potatoes, seasoned salt, vegetable oil, salt, and ground black pepper.
After that, place a cast-iron skillet on the grill or oven. Heat butter in skillet. Add potato mixture and bacon to skillet; close the grill lid and cook until brown and tender, while also stirring occasionally.
Then, right after the potatoes are done cooking, add the garlic. Now, saute for approximately 1 minute.
With the back of a spoon, make four holes in the potato mixture, then break the eggs into each hole.
Now, close the grill lid and bake for about 10 minutes until egg whites are completely set and yolks begin to thicken but aren’t hard.
Finally, open the grill and sprinkle cheese on top of the mixture. Then close the grill lid and let the cheese melt for an additional 2 minutes.
