How To Make The Tastiest Firecracker Chicken:
- 1 cup corn starch
- 1/2 cup Frank’s Red Hot (or something similar)
- 3/4 cup packed dark brown sugar
- 6 boneless, skinless chicken thighs
- 1 tbsp soy sauce
- 3 tsp rice wine vinegar (you can sub apple cider vinegar)
- 2 tsp garlic powder
- Olive oil (not extra virgin) for cooking
- Chopped scallions (for serving)
- Cooked rice (optional)
Start by preheating your oven to 400 degrees °F and set your rack to the middle position.
Next, in a medium saucepan placed over medium heat, combine the Red Hot, garlic powder, brown sugar, vinegar, soy sauce, and 2 tbsp water. Then cook gently, while stirring frequently.
Stir until the sugar has dissolved, then set it aside.
Meanwhile, season your chicken thighs with salt and pepper according to your taste.
Now, dredge the chicken on all sides with corn starch, getting them nice and covered.
After that, set a large, deep-sided skillet over high to medium-high heat and add enough oil to cover the entire bottom surface. Then cook your chicken on all sides until brown and crispy, which should take approximately 3 to 5 minutes per side.
Once the chicken has cooked and is brown and crispy, turn off the heat and pour the sauce all over the meat, you might need to use a spoon.
Next, place the pan in the oven and cook, uncovered, for approximately 5 to 8 minutes, just enough to crisp up the chicken and to help the sauce incorporate with the meat.
