Out of all the zucchini cakes I’ve tried, this one is my favorite. This recipe is perfect for you if you are trying to live a healthier life, or if you are a vegetarian. Not only is this recipe healthy, but it also tastes amazing.
Despite the fact that they are incredibly healthy and easy, but they are also easy to make. They are crispy, healthy, and cheap, so no need to overthink, just try this recipe, I guarantee that you’ll love it!
How to make the best zucchini cakes:
- 1 lb. zucchini (grated)
- 1/2 cup cheese (grated)
- 1/2 cup Panko bread crumbs
- 1/4 cup cilantro (chopped)
- 1 garlic clove (minced)
- 2 scallions (sliced)
- 1 egg
- zest from 1/2 a lime
- 2 tsp jalapeno (chopped)
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp baking powder
Start by adding the zucchini in a food proccesor and grate it.
Now, add salt and place over a bowl that has a strainer on top. Drain for approximately 45 minutes, or until there is no more liquid. To make sure there is no more liquid left in the zucchini, press it down using your fingers. After that, transfer the zucchini to another bowl.
Next, add jalapeño, scallions, garlic, cumin, herbs, lime zest, and smoked paprika. Mix well. Then add the egg and mix.
In a separate bowl mix the panko breadcrumbs and baking powder. Then add them to the zucchini bowl.
Finally, add your favorite type of cheese and mix until all the ingredients have been combined and the mixture turns into a thick paste.
After that, heat oil over medium heat on a skillet. Now using a spoon, shape the zucchini mixture into a ball and place it onto the hot skillet.
Then, slightly flatten the ball and cook each side for approximately 5 minutes, or until you see a beautiful golden-brown color.
Repeat until there is no more zucchini mixture left.
Serve with a squeeze of lime and sour cream. Enjoy!
